L’Institution’s table, your new restaurant in Deauville, is an ode to gourmet food, to high end products, to pronounced savours of generous and accomplished dishes. It’s an appreciation of gourmet and refined, rare and preserved products of excellence.
The menu of L’Institution, is both a moment of sharing and of gastronomic comfort.


For starters

Cooked with delicacy, our starters are thought as gourmet introductions to the meal that follows. Crab meat remoulade, wild bass pavé, gambas nems with small vegetables, foie gras terrine naturally cooked, blue lobster salad, tomatoes soba, romaine lettuce and peas, form a non exhaustive list of the savoury dishes that inaugurates our menu’s discovery.

The Maison
Duler ham

The Maison Duler ham is a haute couture ham, unique. Coming from the oldest breed of porks of France, and traditionnally made, this ham is ripened in the full nature of the Quercy blanc, according to an original maturing, natural drying and ripening process.
Known as the best ham in the world, the Maison Duler ham is displayed at the menu of L’Institution on a watermelon and cebette bruschetta.


Braised meats

Beef, veal, pork, poultry and lamb ! Such are the meats suggested at the menu of L’Institution, meats disclosing all of their savours with embers cooking. Prime ribs, veal and pork chops, rib steaks, L Bone, confit pork breast, Pré salé lamb, roasted chicken … are as many exceptional meat pieces you’ll get to honour a the table of L’Institution !


Grilled Saint Pierre with rosemary, wild bass pavé roasted with sage, roasted cod, sole simply meunière with hazelnut butter make up our fishes menu. Depending on our arrivals, ouf Chefs will propose entire pieces cooked with a salt trust in our embers oven.
Served with small potatoes and herbs, homemade mashed potatoes with salted butter, fricassee of seasonal vegetables or fries cooked with beef fat, our fishes will make a generous and gourmet dish. A very savoury moment indeed !

Semi-cooked 70% cocoa cake and its pistachio cream, exotic fruits Pavlova and its strawberry sorbet, Tahiti vanilla Millefeuille, traditional Paris-Brest, roasted pineapple with lime and fresh mint are just some exemples of a menu to discover while you are in Deauville for the week-end !
